docs(models): tag APIToken fields for v2 OpenAPI reflection

Add doc:/readOnly: tags (and minLength on title) so the Huma-backed
/api/v2 surface documents and schema-validates APIToken. Tags are
inert for v1 (swaggo/XORM/govalidator ignore them).
